KCBS – Kansas City Barbecue Society

KCBS is a non-profit organisation dedicated to sponsor the BBQ culture. It is the largest organization of BBQs and grill enthusiasts, with more than 20,000 members around the world.

KCBS sanctions more than 500 competitions each year. KCBS members also offer service as volunteers in charitable organizations at special events.

KCBS is also the nerve centre of barbecue news:

  • Continuous exchange with associations and other organizations
  • Advanguard on barbecue equipment, spices, sauces and everything you need to make barbecues
  • Cooperation with other organizations for promotion in the world of barbecues

Thanks to a rich archive of barbecue-themed articles, KCBS is also one of the main information engines of fire cooking, and offers educational programs, consulting services and popular barbecue fairs as the favorite kitchen of Americans.

KCBS structures its business in two main branches: the U.S. and the International, where all teams compete outside the U.S.. In addition, teams participating in KCBS races compete in a championship that culminates in the Team of the Year (ToY), which is also divided into US and International.

In each competition, KCBS is present with 2 or more “Reps”, representatives, who ensure all rules are correctly applied. The reps are responsible for the control of the meat used by the teams (“Meat Inspection”) and organize the service with the help of the Table Captains and volunteers present in each competition.

KCBS is strongly focused on the main pillars of the american BBQ. For this reason, the heart of each competition lies in the 4 main categories: Brisket, Pork, Ribs and Chicken.

Although only the 4 categories count for the ToY ranking, the organisers often place additional categories (Ancillary) alongside each other, such as Chef Choice or Mistery Box, where each team receives a box with common ingredients and has to create a dish from it.
