To date, Italy and Europe are mainly familiar with two competitive circuits in the panorama of wood-burning cooking: the NBC, National Barbecue Championship, which is the Italian version of the largest WBQA, World Barbecue Association, and the KCBS, Kansas City Barbecue Society, which is grounded on the American BBQ style.
The two circuits, although sharing many features, are distinguished by some basic settings. The KCBS follows the typical Texas BBQ style, its flavours and the classic triad of Pulled Pork, Pork Ribs and Brisket. The WBQA, on the other hand, tries to enhance the typical recipes of the country that hosts the competition, and therefore tends to be more varied in its offer.
Teams are the backbone of every competition. They put their money and commitment into it and make the party go crazy. Your life in a bbq team will be an endless suffering, but it will still be the best experience you can have.

I challenge you to find someone who says no. Yet the task of the judge, however simple in the collective imagination, is much more complicated than expected.
You will eat a lot, well, and you will meet a lot of new people at your table!
Organizing a competition out of nowhere is an epoch-making task. People drop dead for much less: you have to ask for permission, invite teams and judges to participate, talk to sponsors and, in general, anticipate the unexpected, but if you survive, you’re a hero. And your memory will be passed on to posterity through embarrassing photos of you on the competition field on Saturday night.
